One of the most loved desserts onboard our ships is Palo’s chocolate soufflé. It’s the perfect indulgence to conclude an elegant dinner at Disney Cruise Line’s signature specialty restaurant. For those of you who want to impress your next dinner guests, why not try your hand at making it? Don’t skip the special vanilla sauce, and consider serving it with chocolate sauce and vanilla gelato, too, which are all delicious accompaniments!

Chocolate Soufflé
Serves 6

3 tablespoons butter, plus more for greasing the soufflé cups
6 tablespoons sugar, plus more for dusting the soufflé cups
1 cup milk
3 tablespoons all-purpose flour
3 tablespoons Dutch-processed cocoa
2 ounces (2/3 cup) semisweet or bittersweet chocolate, melted
4 eggs, separated

Vanilla Sauce (recipe follows)

  • Preheat oven to 350°F.
  • Set a full kettle of water on to boil.
  • Butter six 4-ounce soufflé cups and coat with sugar; set aside.
  • Bring the milk to a boil in a small saucepan; meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cocoa to the butter and beat with a whisk to a smooth, paste-like consistency. Reduce heat and cook for 1 minute.
  • Slowly add the hot milk, whisking until smooth, then blend in melted chocolate. Let cool for 5 minutes, then stir in egg yolks.
  • Beat egg whites in a separate bowl until frothy. Slowly add sugar, 1 tablespoon at a time, until stiff, glossy peaks form. Stir a heaping spoonful of egg whites into the chocolate, then fold in the remaining whites just until combined.
  • Pour the batter into prepared soufflé cups. Place cups in a large baking dish and add enough boiling water to reach halfway the sides of the soufflé cups.
  • Bake for 20 minutes. Serve immediately, with warm vanilla sauce.

Vanilla Sauce

1 1/4 cups heavy cream
1/4 vanilla bean, split lengthwise
3 tablespoons sugar
2 small egg yolks

  • Bring cream and vanilla bean to a low boil in saucepan over medium heat.
  • Combine sugar and egg yolks.
  • Add 2 spoonfuls of boiling cream to egg mixture and stir well, then pour back into the remaining cream and continue to cook over low heat, stirring constantly for 3 to 4 minutes, stirring constantly.

Strawberry Soup from Disney World’s 1900 Park Fare

STRAWBERRY SOUP, Disney World’s Grand Floridian Resort

Yield: 4-6 servings

Ingredients:

2 lbs frozen strawberries

16 ounces heavy cream

2 ounces sour cream

3 ounces yogurt

1/2 lb fresh strawberries

Method:

1. Thaw the frozen berries in their juices.

2. Blend all of the ingredients (except the fresh berries) on low until smooth.

3. Chill, shake well before serving.

4. Add fresh strawberry halves as a garnish.

Here’s a TIP: add sugar to taste while blending if you like yours to be a little sweeter.

New Treats to Come at the French Pavilion at Disney’s Epcot

Pistachio Ice Cream at the New L’Artisan des Glaces, Artisan Ice Cream & Sorbet

 

While the new Les Halles Boulangerie & Patisserie and Monsieur Paul, the re-imagined upstairs restaurant at the France Pavilion at Epcot are providing us with wonderfully tastey French treats. There’s still more: look for the new L’Artisan des Glaces, Artisan Ice Cream & Sorbet to open by mid-June in the pavilion’s former bakery space.

This delightful little shop will offer 16 different flavors – 10 ice creams and six sorbets are on the menu (still a work in progress). “Everything will be made in-house with the simplest, fresh ingredients – milk, sugar, cream, eggs and fruit,” says general manager Eric Weistroffer.

The frozen treats will be available by the scoop in cups or cones – and for grown-ups, there’s the option of adding liqueurs, says Weistroffer.

Chili Cone Queso at the New L’Artisan des Glaces, Artisan Ice Cream & Sorbet

Meanwhile, you don’t have to journey to Disneyland Resort to try one of the super-popular, savory cones from Cozy Cone Motel in Disney California Adventure park at Cars Land. They’re now on the menu at Marketplace Snacks in front of Team Mickey at Downtown Disney Marketplace at Walt Disney World Resort. Take your pick of the meaty Chili Cone Queso topped with shredded cheese and crispy corn chips (our favorite), or the hearty meatball cone. Both are served in a thick bread “cone” suitable for strolling while you enjoy.

New Merchandise for Earth Week at Disney

T-Shirts for the 15th Anniversary of Disney’s Animal Kingdom

I’m looking forward to the 15th anniversary celebration for Disney’s Animal Kingdom on Earth Day this year. I recall visiting the park on April 22, 1998, for the grand opening celebration. (I still have the opening day T-shirt from it tucked away in my Disney collection.) As part of Limited Time Magic next week, we are releasing a few commemorative items at the Creature Comforts location in Disney’s Animal Kingdom, starting April 22, 2013. Some of these items will have the specially designed 15th anniversary logo that was created by Disney Design Group artists Michael Posluszny and Maria Clapsis.

For Disney pin collectors, we will have two limited edition pins celebrating the 15th anniversary. They join a limited release mystery pin set that was designed by Disney Design Group Artist Mike Sullivan. I like how the set incorporates various characters and experiences from the park (like the Wildlife Express Train!). I also included this year’s limited edition Earth Day pin, which will also be released that day at Walt Disney World Resort (it was released on April 11 at the Disneyland Resort).

We asked a few artists to create one-of-a-kind, 9-inch Vinylmation figures. I was blown away by the level of detail on figures from artists like Brian Blackmore (his figure is shown above). I also loved Javier Soto’s extremely detailed yeti. Other Vinylmation artists include Maria Clapsis, who made the adorable zebra and baby dinosaur; John Henselmeier, who designed the classic safari Mickey Mouse figure; and Adrianne Draude, who created a colorful figure showing Mickey Mouse in the jungle.
